Ingredients:

  • 1 avocado
  • 150g of cherry tomatoes
  • 100g of spinach
  • 1 carrot
  • 2 tablespoons of tahini
  • 1 lemon

  • Pepper to taste

Instructions:

  • Rinse the quinoa under cold water.
  • In a pot, combine quinoa and vegetable broth, bring to a boil, then simmer for 15 minutes until cooked and fluffy.

  • In a bowl, arrange the cooked quinoa as the base.
  • Top with spinach, sliced avocado, cherry tomatoes, and grated carrot.
  • Drizzle with tahini, squeeze fresh lemon juice on top, and season with salt and pepper.
