- 50g of Icing Sugar
- 50g of Brown Sugar
- 1 tsp of Baking Soda

Instructions:
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine 250g of flour, 100g of sugar, 50g of icing sugar, and 50g of brown sugar.
- In a separate small bowl, mix 1 teaspoon of baking soda and 1 teaspoon of baking powder with a tablespoon of warm water. Allow it to bubble for a few minutes.
- Add the bubbling mixture to the dry ingredients and mix until a dough forms.
- If desired, refrigerate the dough for 30 minutes to firm it up.
- Shape the dough into small balls and place them on a baking tray lined with parchment paper, leaving space between each cookie.
- Flatten each cookie slightly with the back of a fork or your fingers.
- Bake in the preheated oven for about 10-12 minutes or until golden at the edges.
- Remove from the oven and let them cool on a wire rack before serving.
