Ingredients:

  • 250g of Flour
  • 100g of Sugar
  • 50g of Icing Sugar
  • 50g of Brown Sugar
  • 1 tsp of Baking Soda
  • 1 tsp of Baking Powder

Instructions:

  • Preheat the oven to 180°C (350°F).
  • In a large mixing bowl, combine 250g of flour, 100g of sugar, 50g of icing sugar, and 50g of brown sugar.
  • In a separate small bowl, mix 1 teaspoon of baking soda and 1 teaspoon of baking powder with a tablespoon of warm water. Allow it to bubble for a few minutes.
  • Add the bubbling mixture to the dry ingredients and mix until a dough forms.
  • If desired, refrigerate the dough for 30 minutes to firm it up.
  • Shape the dough into small balls and place them on a baking tray lined with parchment paper, leaving space between each cookie.
  • Flatten each cookie slightly with the back of a fork or your fingers.
  • Bake in the preheated oven for about 10-12 minutes or until golden at the edges.
  • Remove from the oven and let them cool on a wire rack before serving.
