Ingredients:
- 200g of fresh spinach
- 100g of feta cheese, crumbled
- 1 sheet of puff pastry, thawed
- 1 egg, beaten
- 2 cloves of garlic, minced
- Salt and pepper to taste
- Olive oil for sautéing

Instructions:
- Preheat the oven to 200°C (400°F).
- In a skillet, heat a drizzle of olive oil over medium heat and add the minced garlic. Sauté until fragrant.
- Add the fresh spinach to the skillet and cook until wilted. Season with salt and pepper. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the sautéed spinach and crumbled feta cheese. Mix well to combine.
- On a lightly floured surface, roll out the puff pastry sheet. Cut it into squares, about 4×4 inches in size.
- Place a spoonful of the spinach and feta mixture in the center of each pastry square.
- Fold the corners of the pastry over the filling to create a bite-sized parcel. Pinch the edges to seal.
- Brush the tops of the pastry bites with the beaten egg.
- Place the assembled pastry bites on a baking sheet lined with parchment paper.
- Bake in the preheated oven for about 12-15 minutes, or until golden brown and puffed up.
