Spinach and Feta Puff Pastry Bites

Ingredients:

  • 200g of fresh spinach
  • 100g of feta cheese, crumbled
  • 1 sheet of puff pastry, thawed
  • 1 egg, beaten
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions:

  • Preheat the oven to 200°C (400°F).
  • In a skillet, heat a drizzle of olive oil over medium heat and add the minced garlic. Sauté until fragrant.
  • Add the fresh spinach to the skillet and cook until wilted. Season with salt and pepper. Remove from heat and let it cool slightly.
  • In a mixing bowl, combine the sautéed spinach and crumbled feta cheese. Mix well to combine.
  • On a lightly floured surface, roll out the puff pastry sheet. Cut it into squares, about 4×4 inches in size.
  • Place a spoonful of the spinach and feta mixture in the center of each pastry square.
  • Fold the corners of the pastry over the filling to create a bite-sized parcel. Pinch the edges to seal.
  • Brush the tops of the pastry bites with the beaten egg.
  • Place the assembled pastry bites on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for about 12-15 minutes, or until golden brown and puffed up.
