Red Velvet Christmas Cake

Ingredients:

  • 125g of all-purpose flour
  • 50g of cocoa powder
  • 150g of granulated sugar
  • 1 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 tsp of salt
  • 1/2 cup of vegetable oil
  • 1 large egg
  • 120ml of buttermilk
  • 1 tbsp of red food coloring
  • 1 tsp of vanilla extract
  • 1 tsp of white vinegar
  • 200g of cream cheese
  • 100g of powdered sugar
  • 1/2 tsp of vanilla extract for frosting

Instructions:

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine 125g of all-purpose flour, 50g of cocoa powder, 150g of granulated sugar, 1 tsp of baking powder, 1/2 tsp of baking soda, and 1/2 tsp of salt.
  • In another bowl, whisk together 1/2 cup of vegetable oil, 1 large egg, 120ml of buttermilk, 1 tbsp of red food coloring, 1 tsp of vanilla extract, and 1 tsp of white vinegar until smooth.
  • Gradually add the wet ingredients to the dry ingredients and mix until well combined.
  • Pour the batter into a greased cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
  • Let the cake cool completely before frosting.
  • For the frosting, beat together 200g of cream cheese, 100g of powdered sugar, and 1/2 tsp of vanilla extract until smooth and creamy.
  • Spread the cream cheese frosting on top of the cooled red velvet cake and serve.
