Quick Vegan Lentil Soup

Ingredients:

  • 1 cup of green lentils
  • 4 cups of vegetable broth
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1 medium carrot, diced
  • 1 teaspoon of cumin
  • 1 teaspoon of salt
  • ½ teaspoon of pepper
  • 2 tablespoons of olive oil

Kitchen Tools Needed:

  • Pot
  • Stirring spoon
  • Measuring cups
  • Blender

Instructions:

  • Heat olive oil in a pot over medium heat.
  • Add chopped onion and sauté until translucent, about 2 minutes.
  • Add minced garlic, diced carrot, cumin, salt, and pepper. Stir and cook for 1 minute.
  • Add lentils and vegetable broth to the pot.
  • Bring to a boil, then reduce heat and let simmer for 2 minutes.
  • Remove from heat and blend the soup until smooth, or leave it chunky as per your preference.
  • Serve hot.
