Ingredients:

  • 2 large bell peppers
  • 200g of cooked quinoa
  • 100g of black beans
  • 100g of corn kernels
  • 100g of diced tomatoes
  • 50g of shredded cheese
  • 1 tsp of chili powder
  • 1 tsp of garlic powder
  • Salt to taste
  • Pepper to taste

Instructions:

  • Preheat the oven to 180°C (350°F).
  • Slice the tops off the bell peppers and remove the seeds.
  • In a mixing bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, chili powder, garlic powder, salt, and pepper.
  • Stuff each bell pepper with the quinoa mixture, packing it tightly.
  • Place the stuffed peppers in a baking dish and sprinkle shredded cheese on top.
  • Bake in the oven for 15-20 minutes or until the peppers are tender and the cheese is melted.
