Ingredients:
- 2 large bell peppers
- 200g of cooked quinoa
- 100g of black beans
- 100g of corn kernels
- 100g of diced tomatoes
- 50g of shredded cheese
- 1 tsp of chili powder
- 1 tsp of garlic powder
- Salt to taste
- Pepper to taste

Instructions:
- Preheat the oven to 180°C (350°F).
- Slice the tops off the bell peppers and remove the seeds.
- In a mixing bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, chili powder, garlic powder, salt, and pepper.
- Stuff each bell pepper with the quinoa mixture, packing it tightly.
- Place the stuffed peppers in a baking dish and sprinkle shredded cheese on top.
- Bake in the oven for 15-20 minutes or until the peppers are tender and the cheese is melted.
