Ingredients:

  • 2 grilled chicken breasts (150g each)
  • 2 cups of mixed salad greens (60g)
  • 1 cup cherry tomatoes, halved (150g)
  • 1/2 cucumber, sliced (100g)
  • 1/4 cup feta cheese, crumbled (30g)
  • 2 tablespoons olive oil (30ml)
  • 1 tablespoon balsamic vinegar (15ml)
  • Salt and pepper to taste

Instructions:

  • Start by preheating the grill pan over medium heat.
  • Grill the chicken breasts for about 3-4 minutes on each side until fully cooked.
  • While the chicken is grilling, prepare the salad by combining the mixed greens, cherry tomatoes, cucumber, and feta cheese in a salad bowl.
  • Once the chicken is cooked, allow it to rest for a minute, then slice it into strips.
  • Add the sliced chicken on top of the salad mixture.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. Drizzle this dressing over the salad and toss gently to combine.
