Quick Black Bean Tacos

Ingredients:

  • 1 can (400g) black beans, drained and rinsed
  • 4 small corn tortillas
  • 1 ripe avocado, sliced
  • 1 cup chopped lettuce
  • 1 medium tomato, diced
  • 2 tablespoons salsa
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

  • In a pan over medium heat, warm the black beans with ground cumin, salt, and pepper for about 2-3 minutes until heated through.
  • While the beans are warming, warm the corn tortillas in another pan or directly over a flame until pliable.
  • Assemble the tacos by placing a portion of the heated black beans on each tortilla.
  • Top with avocado slices, chopped lettuce, diced tomato, and salsa.
