Ingredients:
- 2 ripe bananas
- 100g of all-purpose flour
- 50g of chopped walnuts
- 50g of sugar
- 1 tsp of baking powder
- 1 egg
- 30ml of vegetable oil
- 1/2 tsp of vanilla extract
- a pinch of salt

Instructions:
- Preheat your oven to 180°C (350°F) and grease the muffin tin.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the egg, vegetable oil, and vanilla extract to the mashed bananas, and mix well.
- In another bowl, combine all-purpose flour, sugar, baking powder, chopped walnuts, and salt.
- Gradually add the dry ingredients to the banana mixture and stir until just combined.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for about 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes before removing from the tin and enjoying.
