Ingredients:

  • 2 ripe avocados
  • 200g cherry tomatoes
  • 100g cucumber
  • 30g red onion
  • 40g feta cheese
  • 30ml olive oil
  • 15ml lemon juice
  • salt to taste
  • pepper to taste
  • fresh basil for garnish

Instructions:

  • Cut the avocados in half, remove the pit, and scoop out the flesh into a bowl.
  • Dice the cherry tomatoes and cucumber, and add them to the bowl with the avocado.
  • Finely chop the red onion and crumble the feta cheese into the bowl.
  • Drizzle the olive oil and lemon juice over the ingredients in the bowl.
  • Season with salt and pepper to taste, then gently mix everything together using a fork.
  • Garnish with fresh basil before serving.
