Ingredients:

  • 1 cup of cooked quinoa
  • 1/2 cup of cherry tomatoes, halved
  • 1/2 cup of cucumber, diced
  • 1/4 cup of red onion, finely chopped
  • 1/4 cup of feta cheese, crumbled
  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste
  • 1/4 cup of fresh parsley, chopped

Instructions:

  • In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, and parsley.
  • Drizzle with olive oil and lemon juice, then lightly toss the ingredients together with a fork.
  • Season with salt and pepper according to your taste and mix well again.
  • Finally, sprinkle the crumbled feta cheese on top and serve immediately.
