Ingredients:
- 4 mini bell peppers
- 200g of ground beef
- 100g of cooked rice
- 50g of diced tomatoes
- 30g of shredded cheese
- 1 teaspoon of olive oil
- 1 teaspoon of Italian seasoning
- Salt to taste
- Black pepper to taste

Instructions:
- Preheat the oven to 180°C (350°F).
- Cut the tops off the mini bell peppers and remove the seeds.
- In a mixing bowl, combine the ground beef, cooked rice, diced tomatoes, olive oil, Italian seasoning, salt, and black pepper. Mix well.
- Stuff each mini bell pepper with the beef and rice mixture, packing it gently.
- Place the stuffed peppers upright in a baking dish and sprinkle the shredded cheese on top.
- Bake in the preheated oven for about 10 minutes or until the peppers are tender and the cheese is melted.
- Remove from the oven and let it cool for a minute before serving.
