Ingredients:

  • 1 red bell pepper, cut into squares
  • 1 yellow bell pepper, cut into squares
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 200g of cherry tomatoes
  • 2 tablespoons of olive oil
  • 3 tablespoons of balsamic vinegar
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Kitchen Tools Needed:

Instructions:

  • Preheat the grill to medium-high heat.
  • Thread the red bell pepper, yellow bell pepper, zucchini, red onion, and cherry tomatoes onto the skewers alternately to create colorful patterns.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, salt, and pepper.
  • Brush the veggie skewers with the balsamic dressing mixture.
  • Grill the skewers for 2-3 minutes on each side until the veggies are tender and slightly charred.
