Gingerbread Cake with Cream Cheese Frosting

Ingredients:

  • 100g of all-purpose flour
  • 50g of brown sugar
  • 1 tsp of baking soda
  • 1 tsp of ground ginger
  • 1 tsp of ground cinnamon
  • 1/2 tsp of ground nutmeg
  • 1/4 tsp of salt
  • 2 tbsp of unsalted butter, softened
  • 1 egg
  • 75ml of milk
  • 50g of molasses
  • 100g of cream cheese, softened
  • 50g of powdered sugar
  • 1 tsp of vanilla extract

Instructions:

  • Preheat your oven to 180°C (350°F). Grease and flour a small baking pan.
  • In a mixing bowl, whisk together the flour, brown sugar, baking soda, ginger, cinnamon, nutmeg, and salt until well combined.
  • In another bowl, cream the softened butter, then add the egg, milk, and molasses. Mix until smooth.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Pour the batter into the prepared baking pan and spread it evenly.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • While the cake is baking, prepare the cream cheese frosting by mixing the softened cream cheese, powdered sugar, and vanilla extract with a hand mixer until smooth and fluffy.
  • Once the cake has cooled completely, spread the cream cheese frosting on top using a spatula.
