Quick Eggplant Parmesan

Ingredients:

  • 2 medium eggplants, sliced
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon olive oil
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Kitchen Tools Needed:

  • Baking dish
  • Oven
  • Knife
  • Spoon

Instructions:

  • Preheat the oven to 375°F (190°C).
  • Lightly brush the eggplant slices with olive oil and season with salt and pepper.
  • Layer half of the marinara sauce at the bottom of the baking dish.
  • Place half of the eggplant slices on top of the marinara sauce.
  • Sprinkle half of the mozzarella cheese and half of the Parmesan cheese over the eggplant.
  • Repeat the layering with the remaining marinara sauce, eggplant slices, mozzarella, and Parmesan.
  • Top with dried basil.
  • Bake in the oven for about 25-30 minutes or until the cheese is melted and bubbly.
