Eggnog Cake with Spiced Buttercream

Ingredients:

  • 1 cup of all-purpose flour
  • 1/2 cup of granulated sugar
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of ground nutmeg
  • 1/2 teaspoon of ground cinnamon
  • 1/2 cup of eggnog
  • 1/4 cup of vegetable oil
  • 1 large egg
  • 1/2 teaspoon of vanilla extract
  • 1/4 cup of unsalted butter, softened
  • 1 cup of powdered sugar
  • 1/2 teaspoon of ground cinnamon for frosting
  • 1/4 teaspoon of vanilla extract for frosting

Instructions:

  • Preheat your oven to 350°F (175°C) and grease a small baking pan.

  • In another bowl, mix together the eggnog, vegetable oil, egg, and vanilla extract until smooth.

  • Pour the batter into the prepared baking pan and spread it evenly.
  • Bake for about 20-25 minutes or until a toothpick inserted in the center comes out clean.
  • While the cake cools, prepare the spiced buttercream frosting by beating the softened butter in a mixing bowl until creamy.
  • Gradually add the powdered sugar, ground cinnamon, and vanilla extract, mixing until smooth and fluffy.
  • Once the cake has cooled, frost the top with the spiced buttercream using a spatula.
