Ingredients:

  • 400g of canned tomatoes
  • 200ml of vegetable stock
  • 100ml of heavy cream
  • 30g of fresh basil leaves
  • 1 tablespoon of olive oil
  • Salt to taste
  • Pepper to taste

Instructions:

  • In a saucepan, heat olive oil over medium heat.
  • Add canned tomatoes and vegetable stock, bring to a simmer.
  • Once simmering, add fresh basil leaves and let it cook for 2-3 minutes.
  • Remove from heat and blend the mixture until smooth.
  • Stir in the heavy cream and season with salt and pepper.
  • Serve hot, garnished with additional basil if desired.
