Ingredients:

  • 200g of all-purpose flour
  • 100g of brown sugar
  • 50g of unsalted butter
  • 1 egg
  • 2 teaspoons of ground ginger
  • 1 teaspoon of ground cinnamon
  • ½ teaspoon of baking soda
  • ¼ teaspoon of salt
  • 60ml of molasses
  • 1 teaspoon of vanilla extract

Instructions:

  • Preheat your oven to 180°C (350°F).
  • In a mixing bowl, cream together the butter and brown sugar until light and fluffy.
  • Add the egg, molasses, and vanilla extract, and mix until fully combined.
  • In another bowl, whisk together the flour, ground ginger, cinnamon, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • On a floured surface, roll out the dough to about 1/4 inch thick and use cookie cutters to cut out shapes.
  • Place the cookies on a baking tray lined with parchment paper and bake in the preheated oven for 10-12 minutes until golden.
