Classic Fruitcake

Ingredients:

  • 200g of mixed dried fruits
  • 100g of unsalted butter
  • 100g of sugar
  • 2 large eggs
  • 150g of all-purpose flour
  • 1 tsp of baking powder
  • 1 tsp of vanilla extract
  • 1/2 tsp of ground cinnamon
  • 1/4 tsp of nutmeg
  • 50g of chopped nuts

Kitchen Tools Needed:

Instructions:

  • Preheat your oven to 180°C (350°F).
  • In a mixing bowl, cream together the softened unsalted butter and sugar until light and fluffy.
  • Beat in the large eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract and the spices (ground cinnamon and nutmeg).
  • In a separate bowl, mix the all-purpose flour and baking powder, then gradually fold this into the wet mixture until just combined.
  • Add the mixed dried fruits and chopped nuts to the batter, folding gently until evenly distributed.
  • Pour the batter into a greased baking pan, smoothing the top with a spatula.
  • Bake in the preheated oven for about 25-30 minutes, or until a skewer inserted into the center comes out clean.
  • Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
