Ingredients:

  • 120g of all-purpose flour
  • 100g of brown sugar
  • 50g of unsalted butter
  • 2 medium eggs
  • 50g of mixed dried fruits
  • 50g of chopped nuts
  • 1 teaspoon of baking powder
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of ground cinnamon
  • A pinch of salt

Instructions:

  • Preheat the oven to 180°C (350°F).
  • In a mixing bowl, cream together the unsalted butter and brown sugar until light and fluffy.

  • Gradually fold in the all-purpose flour, baking powder, cinnamon, and a pinch of salt.
  • Stir in the mixed dried fruits and chopped nuts until evenly distributed.
  • Pour the batter into a greased cake pan and smooth the top with a spatula.
  • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool for a few minutes before removing it from the pan, then transfer to a wire rack to cool completely.
